Ingredients: 3 medium-large beets 1 bunch cilantro, chopped (if you're a cilantro hater, use parsley) 1/4 cup olive oil juice of 1 lime 1 clove garlic, finely chopped or crushed 1/4 tsp unrefined sea salt Instructions: Preheat oven to 400 F. Wash beets in a large container with a lid. If you don't have a container with a lid, use foil to cover. Roast 1 hour or until tender. Remove from oven and let cool with lid on.
