Pork Apple Cabbage Bowl Recipe

Out of my family of four, my youngest son who's 16, is the hardest to please. Even he likes this recipe. I hope you do too!

Port Apple Cabbage Bowl

Serves 4

Ingredients:

1 lb ground pork 4 cups shredded green cabbage 1 cup shredded purple cabbage 2 medium carrots, grated 2 green apples, grated and tossed in 1 Tbs lime juice 1/2 cup diced red onion 2 shallot cloves, diced 5 cloves garlic, minced or crushed 3 Tbs coconut aminos 2 Tbs sesame oil (not toasted) 1 Tbs fish sauce 1 Tbs coconut vinegar 1/2 Tbs minced ginger

Instructions:

Heat sesame oil in a large skillet over medium heat. Add shallots, red onion and garlic. Saute until onions are soft, about 3 minutes, stirring frequently. Add pork, ginger and fish sauce. Cook 7-10 minutes until pork is cooked, stirring occasionally. Add cabbage, carrots, apples, coconut aminos and coconut vinegar. Mix well and cook 5 minutes, until cabbage softens. Enjoy!
