Beet, carrot, green apple slaw
1 large beet
1 green apple
2 medium size carrots
juice from 1/2 a lemon
drizzle of extra virgin olive oil
The easiest way to make this slaw is with a food processor. If you don’t have a food processor you can use a cheese grater. You could also make it with a friend who has a food processor. That would probably be the most fun.
Grate the beet, carrot and apple. Put in a large bowl and mix with the juice from 1/2 a lemon and a drizzle of olive oil. It will keep covered in the fridge 5-7 days.
This slaw tastes delicious and it’s a great way to eat beets even if beets aren’t your favorite vegetable. I recently handed out samples of this slaw at a local community event. I didn't know how it would go over but was happy to discover people really enjoyed it, even a few kids! It makes me really happy to see kids eating beet slaw. Eat this slaw regularly as a condiment. It can aid your digestion and support your liver too.

To get the most out of those wonderful nutrients in our food, we first need to be able to digest them. The primary organs involved in digestion are the stomach, the gallbladder and the pancreas.
The gallbladder's job is to store bile (that has been made by the liver) and release it when there is fat present. The bile helps break down the fat so we can benefit from it. It is very common for bile to become sluggish and thick and then it doesn’t come out as easily when it needs to. This slaw helps to thin the bile and help it flow more freely so it can help digest the fat we eat.
Bile is also the river that the liver dumps it's toxins into to be carried out of the body. If your bile is not thin and flowing, toxins can build up in your liver and cause problems. Your liver does over 500 things that we know of, so it’s best to support your liver every chance you get.
Below are some commonly occurring signs that arise when your liver and/or gallbladder needs support. If you experience any of them, you may benefit from eating this slaw on a regular basis.
